DINNER WITH WOLVES on Tuesday, December 4th. Featuring Lobos Margaritas from Gem & Bolt Mezcal, this is a special pop-up dinner starting at 6:30PM to celebrate my new restaurant Tacos Lobos.
Limited tickets available for $20 (includes tax & gratuity). Long communal tables will be setup to enjoy the meal together. We wanted to create a fun, shared dining experience to showcase our Tacos Lobos menu.
Why tacos? I’ve always LOVED tacos and had my own taco truck (Pico de Gap) years ago. WOLF’s favorite staff meal has always been our taco night. Our first DWW in September featured a five-course Mexican tasting menu then I recently ate my way through Mexico City and Mérida, Yucatán in October. There’s nothing like eating a freshly made corn tortilla filled with Cochinita Pibil, my favorite slow-roasted Yucatán pork dish. That magical first bite is the moment I want to recreate for you.
My version? Keeping the classic flavors, our pork is braised and sous vide in citrus (orange & lime juice) with an earthy red-orange chili seed paste called Achiote. After experimenting with different recipes, our final 36 hour process yields this fork-shreddable pork that is a perfect match to our housemade organic corn tortillas, salsa verde & pickled red onion.
Tacos Lobos is located next door to WOLF (7661 Melrose Avenue) and open everyday 11am-6pm. We’re excited to feed you soon!
