Chilled soba, cured anchovies, mustard ponzu, beet, basil, nectarine

Mushroom Dashi

Sake kasu marinated Black cod, mushroom medley, chrysanthemum, okra, sweet corn, pine nut, zest.

Steelhead

Cherry smoked, pickled ginger, plum, radish, wasabi, pea shoots.

Halibut

Sashimi slices with Meyer lemon kosho, ginger, green onion, soy, sizzling roasted garlic sesame oil.

Lamb Chop

Turmeric-sake kasu glazed, blistered beans, peanut, sweet roasted pepper sambal

Panna Cotta

Japanese yam, coconut, apricot, sesame salted caramel
